INGREDIENTS:
- 1 aubergine/eggplant
- 2-3 tbsp olive oil
- 2 tsp maple syrup
- 1 tbsp soy sauce
- 1 tsp liquid smoke
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Pinch of salt and black pepper

- Pre-heat oven to 120-130C/240-260F
- Slice the aubergine/eggplant thinly. Next, mix the ingredients to make a marinade. Place aubergine/eggplant on a baking tray and brush/pour marinade on the sliced aubergine/eggplant. Bake for 25-30 minutes.
