Best Ever Chocolate Chip Cookies

These are the best chocolate chip cookies I’ve ever made. I made these today with the kids on their day off, and they are perfect and fluffy. Buttery and gooey.. Followed the directions exactly and they turned out perfect! This will be my go-to choc chip cookie recipe for now on! Recipe was extremely easy especially for a beginner.

Best Ever Chocolate Chip Cookies
Ingredients:
  • 1 1/2 cups all-purpose flour see notes below
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter see notes below, room temperature
  • 1/2 cup firmly packed light brown sugar
  • 6 tablespoons granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups semisweet chocolate chips I used Ghiradelli semi-sweet. Use less chocolate chips if you want more cookie and not as much chocolate such as 1 1/4 cups to 1 1/2 cups.

Directions:

Preheat the oven to 350°F and line 2 baking sheets with parchment paper or spray with non-stick spray.. (To get best results, use parchment paper)]

In a medium bowl, sift the flour, baking soda and salt together.

In another large bowl, using an electric mixer at medium speed, beat together the butter, and sugars until smooth and mixed together well.

Add the egg and vanilla and mix on low speed until mixed in.

Gradually add the flour mixture and mix in until just incorporated. Do not keep mixing – do not overmix.

Add chocolate chips and stir with a wooden spoon, again no overmixing, just until incorporated.

Chill dough if dough is warm.

Using a small or large ice cream scoop or heaping tablespoon, drop the dough onto the prepared baking sheets, 6 to 8 per pan, depending on size you are making.

Bake the cookies, 1 sheet at a time, until the bottoms and edges are lightly browned and the tops feel firm when lightly touched,

Small cookies bake 8-10 minutes

Large cookies bake 10-13 minutes.

Let the cookies cool for 5 minutes on the baking sheets, then transfer the cookies to wire racks to cool completely.

Ingredients:
  • ½ cup margarine, melted
  • 1 ½ cups graham cracker crumbs
  • 1 cup chopped walnuts
  • ¾ cup semisweet chocolate chips
  • ¾ cup butterscotch chips
  • 1 ½ cups flaked coconut
  • 1 ⅓ cups sweetened condensed milk

Directions:

Preheat oven to 350 degrees F (175 degrees C).

Pour melted margarine into a 9×13-inch pan. Sprinkle the graham cracker crumbs evenly over the margarine. Place the chopped nuts over the crumbs, and scatter the chocolate and butterscotch chips over the nuts. Add the coconut over all, and pour the milk evenly over the top.

Bake 25 to 30 minutes or until lightly brown on top. Cool at least 20 minutes, then cut into desired sized bars.

Granny Lindsay’s Best Bar Cookies

Stunning bar treats with oats, chocolate chips and caramel frozen yogurt beating all layered to make. Yummy. I carried these to a work pot karma and half of them were passed when lunch moved around. THE BEST Bar treat around.

Ingredients:
  • 2 cups all-purpose flour
  • 2 cups rolled oats
  • 1 ½ cups brown sugar
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 ½ cups butter, melted
  • 2 cups semisweet chocolate chips
  • 1 (12 ounce) jar caramel ice cream topping
  • 6 tablespoons all-purpose flour

Directions:

Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch pan.

In a large bowl, stir together 2 cups flour, oats, brown sugar, salt and baking soda. Mix in melted butter until evenly distributed. Press half of the mixture into the bottom of the prepared pan.

Bake for 10 minutes in the preheated oven, until lightly toasted. Remove from the oven and immediately sprinkle with chocolate chips. Let stand. In a small bowl, mix the caramel topping with the remaining flour; drizzle evenly over the chocolate chips. Sprinkle the remaining crust mixture evenly over the caramel layer and press down lightly.

Bake for 15 more minutes in the preheated oven. Allow to cool completely before cutting into squares.

These are sooo heavenly! These treats are truly chewy and addictive. I have made them twice now and they vanish so quick. Exceptionally pleasant blend of peanut butter treats and chocolate chip. Ingredients:
  • ½ cup butter, softened
  • ½ cup peanut butter

  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour

Directions:

Preheat oven to 375 degrees F (190 degrees C).

In a large bowl, cream together the butter, peanut butter, brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in the corn syrup, water, and vanilla. Combine the flour, baking soda, and salt; stir into the peanut butter mixture. Fold in chocolate chunks. Drop by 1/4 cupfuls 3 inches apart onto ungreased baking sheets.

Bake for 12 to 14 minutes in the preheated oven, or until edges are golden. Allow cookies to cool for 1 minute on the cookie sheet before removing to wire racks to cool completely.

  • 1 cup Karo syrup
  • 1 cup sugar
  • 1-1/2 cups peanut butter
  • 3-1/2 cups Rice Krispies

Directions:

In a medium sized pot, cook the syrup and sugar over low heat until the sugar dissolves. Continue cooking until the mixture starts to bubble and then remove from heat. Stir in peanut butter and then add the Rice Krispies.

Drop by spoonfulls on wax paper.

Spicy Hot Chocolate Valentine Cookies

These cookies are the best of 2 worlds. The sweetness of chocolate with a kick from cayenne. Great texture and the cayenne is subtle to start and bites in the end. Ideal accompaniment is a tall glass of milk. Went to a church picnic last week and entering it into a cookie contest. I ended up winning the “best texture” category and the “best cookie overall” category! Got lots of compliments. Just enough kick to balance the chocolate. WINNER!

Spicy Hot Chocolate Christmas Cookies


Ingredients:

1 ¾ cups white sugar, divided

1 cup softened butter

1 teaspoon vanilla extract

½ teaspoon sea salt

2 large eggs

2 teaspoons cream of tartar

1 teaspoon baking soda

½ cup unsweetened cocoa powder

1 teaspoon ground cinnamon, divided

½ teaspoon cayenne pepper

2 ¼ cups all-purpose flour

1 cup semisweet chocolate chips


Directions:

Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.

Beat 1 1/2 cups sugar, butter, vanilla extract, and salt together in a bowl until fluffy. Beat in eggs; add cream of tartar and baking soda. Beat in cocoa powder, 1/2 teaspoon cinnamon, and cayenne powder. Beat in flour. Stir chocolate chips into the dough.

Mix remaining 1/4 cup sugar and 1/2 teaspoon cinnamon together in a bowl.

Roll heaping tablespoons of dough into balls. Roll balls in the sugar-cinnamon mixture and place on the prepared baking sheets.

Bake in the preheated oven until centers are set and edges crack slightly, about 10 minutes. Cool on baking sheets for 5 minutes.

Love Cookies for Valentine Recipe

Ingredients

  • 1  cup  unsalted butter 227g, unsalted, room temp
  • 1  cup  granulated sugar 234g
  • 2  eggs
  • 4  cups  all-purpose flour  500g, sifted
  • 3/4  cup  cornstarch 80g, sifted
  • 3/4  teaspoon  kosher salt 4g
  • 1  tablespoon  vanilla extract 15mL
  • 1/4  cup  pink sanding sugar 50g
  • few drops pink food coloring

Takes , serves 16.

Instructions

  1. It's easiest to make two separate batches of cookie dough; one uncolored and one pink just use half the ingredients for each batch. You can however make a big batch of dry and a big batch of wet ingredients then divide in half using a scale, color one and mix.
  2. In these instructions we will be making two batches starting with the uncolored batch.
  3. Sift 2 cups flour, 40g cornstarch, and about 1/3 tsp salt into a large bowl then whisk to incorporate.
  4. In a stand mixer fitted with a paddle attachment cream 1/2 cup room temperature butter, and 1/2 cup sugar together.
  5. Mix in 1 1/2 tsp vanilla extract, then one egg to the sugar/butter mixture.
  6. Add 1 egg to each sugar/butter mixture.
  7. On low, mix in dry mixture until almost combined. Scrape the bowl down then mix once more until just combined.
  8. Roll out to a 1/4 inch thickness then transfer onto a baking sheet and place in refrigerator to chill. I like to roll my cookie dough between two layers of plastic for ease of transfer and clean up.
  9. Now it's time to make the pink batch. Repeat the above steps but add in a few drops of soft pink food coloring to the butter sugar mixture along with the vanilla.
  10. Roll out as before and sprinkle about ¼ cup pink sanding sugar onto the pink batch. Give a gentle roll to press the pink sugar into the dough.
  11. Cover with plastic, transfer to a baking sheet and chill for at least 20 minutes to firm up.
  12. Once the dough has chilled use a ruler and a sharp knife to cut ½ inch strips of dough. Return to fridge while you work on the next batch.
  13. Layer pink and white stripes so that they are touching.
  14. Cover dough with a sheet of plastic wrap or parchment paper then roll to create a seal. Transfer to the fridge to chill on last time.
  15. Preheat to 375 degrees F.
  16. Cut cookies with a heart shaped cutter.
  17. Carefully lace cookies on a baking sheet lined with parchment paper or a silicone baking sheet.
  18. Bake for about 12 minutes then allow to cool before enjoying.

Ingredients:
  • Best Ever Sugar Cookie Icing
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 2 large eggs, room temperature
  • 1 teaspoon almond extract
  • 3-4 cups all purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • Pearl Sugar Balls (dragees)

Instructions
  1. In the bowl of your electric mixer (or with a hand mixer), cream the butter and sugar, on medium speed until light and fluffy (about 3 minutes).
  2. Add the eggs, vanilla and almond.  Beat until combined. Add the salt and 3 cups of flour; beat until you have a smooth dough. If the dough is sticky (meaning when you touch it and pull your fingers away the dough sticks to you), add more flour a tablespoon at a time until it comes together. Divide the dough in half and wrap each half in plastic wrap. Refrigerate for about one hour or until firm enough to roll.
  3. Preheat oven to 375°F. Line two baking sheets with parchment paper or silpat mats.
  4. Remove half of the chilled dough from the refrigerator and, on a lightly floured surface, roll out the dough to a thickness of 1/4 inch. (Keep turning the dough as you roll, making sure the dough does not stick to the counter.)  Cut out desired shapes using a lightly floured cookie cutter and transfer cookies to baking sheet.
  5. Place the baking sheets with the unbaked cookies in the refrigerator for about 15 minutes to chill the dough which prevents the cookies from spreading and losing their shape while baking. Note: If you are not going to frost the baked cookies, you can sprinkle the unbaked cookies with sparkling sugar at this point.
  6. Bake the cookies for about 9-11 minutes (depending on size) or until the edges are just starting to brown. Remove from oven and let cookies cool on baking sheet for 5 minutes before transferring to a wire rack to finish cooling. Decorate the cookies with Best Ever Sugar Cookie Icing if desired. Be sure to let the icing dry completely before storing. (This may take several hours or overnight.)

Pinwheel Sugar Cookies for Christmas Recipe



Instructions
  1. Separate dough into 2 halves. Add red food coloring to one half. Add 1/2 of your cookie dough to a stand mixer and add red food coloring until your mixture reaches your desired color. You can also knead food coloring into dough until completely combined if you do not have a stand mixer. 
  2. Place red cookie dough on parchment paper. Roll red cookie dough to about 1/4 inch thick rectangle. Set aside. 
  3. Place plain cookie dough on parchment paper (or wax paper). Roll plain cookie dough out to about 1/4 inch thick rectangle. Stack cookie dough sheets on top of one another with the parchment on the outside. 
  4. Remove the top parchment and roll over the dough gently with a rolling pin (to help the 2 doughs become one). Begin on one end and roll the cookie dough into a log (removing the remaining paper as you go). If dough is too soft to work with, refrigerate for 30 minutes and then try again.
  5. Once dough is formed into a log, wrap tightly with plastic wrap and refrigerate for 1 hour.
  6. Meanwhile: pour sprinkles into a cookie sheet. Unwrap dough and roll into sprinkles. Rewrap and refrigerate 3 hours to overnight.
  7. Preheat oven to 350ºF. 
  8. Slice cookies and place on cookie sheet about 1 inch apart. Bake according to your sugar cookie directions or until the cookies feel set. 
  9. Allow to cool for 5 minutes on the cookie sheet and then transfer to a cooling rack to cool completely.

Instructions
  1. In a microwave, melt white chocolate at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth.
  2. Dip one end of each cookie into melted chocolate, allowing excess to drip off. Place on wire racks. For Santa's hat, sprinkle red sugar on top part of chocolate. Press one vanilla chip off-center on hat for pompom; let stand until set.
  3. Dip other end of each cookie into melted chocolate for beard, leaving center of cookie uncovered. Place on wire racks. With a dab of melted chocolate, attach semisweet chips for eyes and a Red Hot for nose. Place on waxed paper until set.

  1. Bake Cookies as directed. As you pull them out of the oven use a teaspoon-measuring spoon to make divots in the middle of the cookie and then allow the cookies to cool completely.
  2. While you are waiting for your cookies to cool, place a cup of chocolate chips in a bowl and microwave them in intervals of 12 seconds until they are completely melted. You will use this melted chocolate to drizzle the legs onto the cookies.

Dark Chocolate Chip Cookies for Halloween Recipe



Instructions
  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. In a large bowl of a stand mixer, combine the butter and sugars and beat for 3-4 minutes, until light. Add eggs and vanilla and mix well.
  3. Add the flour, cocoa powder, baking soda and salt to the other mixture and mix on low speed, just until combined.
  4. In a separate bowl, combine the Halloween chips, white chocolate chips, peanut butter chips, and mini Reese's Pieces and give them a quick stir so they are evenly distributed. Gently stir or fold in 1 3/4 cups of the chips into the cookie batter, setting the remaining chips aside in reserve.
  5. Scoop approximately 2 tablespoons of cookie dough for each cookie and shape into balls by rolling between the palms of your hands. You might need to refrigerate the dough for 30-60 minutes in order to work with it as it is a very soft dough, although I can usually skip that step as long as I work quickly. Once the dough is shaped, place the balls on the prepared baking sheet 2 inches apart and bake for 8-10 minutes, just until set. Do not overbake.
  6. As soon as the cookies are removed from the oven, press a few of the reserved chocolate and peanut butter chips into the top of each cookie. It's a total vanity move but adding the extra chips at the end makes the cookies look so pretty and festive. Transfer to a wire rack to cool completely and store in an air-tight container.
